Greek salad. So simple yet so satisfying! I have gone through the extra effort to make a snack/ lunch jar for my wife when she is off to work. This seems a very humble expression of the lunch jar, you can find out more by following this link or this one. Your choice.
The ingredients I’ve used in this recipe is probably the same as what most people use to make Greek salad:
- Romaine lettuce
- Red Onion
- Red Pepper
- Kalamata Olives
- Feta Cheese (omit for vegan option)
- 3 tbsp Olive Oil
- 1 tbsp Lemon Juice
- 1 tbsp Victorian Epicure greek salad herb mix
- Salt and Pepper to taste
Mix all the dressing ingredients together and set aside. Assemble salad by layering the lettuce, cucumbers, peppers, onion, tomatoes, feta, and olives in that order. Drizzle with dressing and enjoy!
While I chopped my vegetables, I kept some smaller pieces to the side for the lunch jar. Then I assembled it by adding a little dressing at the bottom…
covering the dressing with some sturdy salad leaves, and topping these with smaller pieces…
Then I added my cucumbers, peppers, tomatoes, onions, feta cheese and olives in that order.
It certainly looks promising. I am sure my wife will appreciate it and have as much fun eating it as I did making it!
